TFRK – cinnamon popcorn

Tales from Rivvy’s Kitchen – cinamon drizzled popcorn.

I had this at a friend’s house a couple of weeks ago and promptly stole the recipe because it was DELICIOUS.

You will need:

Freshly popped popcorn
2 cups water
4 cups dark brown sugar
1 tbsp ground cinnamon
1 tsp ground ginger
1/4 tsp ground cloves
Pinch salt
50g butter
pinch nutmeg

Method:

Put the water and sugar in a pan and heat slowly over a low-medium heat. Add the tablespoon of cinnamon, teaspoon of ginger, quarter teaspoon of cloves and pinch of salt.

When it is almost boiling, add the butter and nutmeg.

Bring to the boil and reduce down until the mixture has a syrupy consistency and coats the back of a spoon.

Drizzle on your freshly popped corn.

Stuff it all in your face because it’s so damn good you can’t help it.

Notes:

My friend had made a large amount of this syrup so we had some left over to experiment with. She did notice that it had crystallised slightly when it cooled. That’s okay – if it does it, just warm it up again and the crystals will dissolve.

We stirred some into hot chocolate which was absolutely amazing. It tasted so good. I should imagine it would be excellent in coffee too. Or a latte of any description.

It might even be a good addition to some cocktails. Hmmm… *ponders*…there shall have to be some experimentation…
