TFRK – Chocolate, whisky and smoked bacon sundae

This is a special edition for Tales from Rivvy’s Kitchen. I don’t talk about my family much but every now and then I’m so darn proud of one of them that I have to shout it from the roof tops. As some of you who follow me on Twitter will know, my brother Stuart is the head chef at The Lodge at The Celtic Manor resort near Newport in South Wales.

It’s chocolate week this week and he’s a massive fan of using local produce. This recipe uses Caldy Island Chocolate (made by monks, no less!), Penderyn whisky and other local ingredients to make something very special and uniquely Welsh. Although he’s done his homemade (that ice cream looks amazing!) you can buy many of the ingredients ready made if you’re not feeling brave enough to attempt it from scratch. Meringues, chocolate cookies, caramel sauce, vanilla cream, peanut ice cream and bacon pieces are all readily available at most shops.

Luckily for us, he’s filmed himself making it, so enjoy!!
